Ingredients:
Umami Braised Pork
3 lbs pork butt/shoulder
4 cloves garlic (smashed) reserve 1 clove and embed slices into roast prior to searing
1/4 cup low sodium chicken broth
1/3 cup low sodium soy sauce
1/4 cup fresh lime juice
1/8 cup rice vinegar
2T mirin
1-2 teaspoon fresh grated ginger
1 jalapeno, seeded/membrane removed and sliced into thin strips
1 1/2 T. fish sauce
3 T. apple cider vinegar
2 T. sesame oil
2 green onions (light green and white parts cut into 3 inch pieces)
2 T. brown sugar
2 T grapeseed oil (or other neutral oil for browning)
rice vermicelli noodles
Quick Pickled Ginger, Cucumber, and Carrots
3 small seedless or Armenian cucumbers cut into three-inch-long matchstick style spears
2 carrots cut into a similar shape
1 2-inch finger of ginger cut into 1.5-inch matchsticks
1/2 cup water
1/2 cup each—rice vinegar and seasoned rice vinegar
2 T. tablespoon sugar
2 t. salt
Salad
Mint leaves
Cilantro leaves
Greenleaf Lettuce (cut into strips)
Roasted Peanuts (smashed)
Instructions:
Season the roast with salt/pepper. Embed slices from one of the cloves of garlic into the roast. Brown roast in a hot skillet with 2 T. oil.
Place the pork into a slow cooker. Combine all the other ingredients and pour over the top of the pork. Cook on hi for about 6 hours until the roast is tender; baste occasionally and flip the roast over at least once during cooking. Meanwhile prepare the cucumbers, ginger, and carrots.
Julienne the veggies according to the directions above. Combine the water, vinegars, sugar, and salt and heat in a small saucepan until salt and sugar are dissolved. Cool for just a few minutes before plunging your veggies into the hot tub. ** Marinate 1-2 hrs.
Prep your greens.
When the pork is ready, prepare your noodles per the package instructions. I rinse my noodles after to ensure they don't stick. Then assemble your bowls. I put about 1/2 cup of noodles or so and a generous piece of pork alongside a cup or so of salad and some pickled veggies. Top with braise liquid or serve it on the side along with crushed peanuts.
