Ingredients:
dough (makes about 16 medium sized)
2 oz butter
1 t salt
2 C flour plus more dusting
1 C boiling water
filling
olive oil for sauting brushing tops before browning
2 ears of roasted corn (kernels removed)... I did mine in a dry grill pan the char makes it taste good
1/3 lb little dutch or yukon potatoes (small dice)
1/2 red onion (small dice)
1 red bell pepper (small dice)
2 cloves of garlic (grated)
1 t ground cumin
1 t Aleppo pepper
1/cup ricotta
2 cups grated hatch green chili cheddar cheese (or pepper jack)
1 cup vegetable broth (more as needed)

Instructions:
Prepare the dough, by pouring the boiling water over the butter and salt, mix until melted and cool slightly. Stir in the flour and when it comes together turn it out on a floured surface and knead for about 2 minutes. It should feel soft, smooth, and slightly elastic and not at all sticky. If it is sticky add more flour sprinkle by sprinkle. Then wrap in cling wrap and refrigerate for about an hour. Meanwhile, start on your filling. In a large saute pan add a few T of olive oil. Saute your onion, bell pepper and garlic until soft and onion is translucent add in potatoes, cumin, salt and pepper and cook ten minutes more. Add in broth and continue to cook until potatoes are soft and cooked through. Nobody likes a crunchy potato except for my stepdad. Add corn and warm through. Then turn off heat and add in the cheeses, let sit and flavors will meld.
Heat oven to 425 start to form the empanadas. just tear off about a 2-inch round piece of dough and roll it into a circle. Fill it with about 2T of filling, use water to wet the edge and fold over the top. Crimp the edges with a fork. Place on a parchment lined cookie sheet and brush with olive oil and a sprinkling of sea salt. Bake for 15 minutes or until brown on the top and you see a little bubble action on the sides. Serve with Melissa Clark's cilantro dipping sauce because it's pretty hard to beat.
