Ingredients:
mini donuts (about 9-12)
1 cup flour
1/3 cup sugar
1/4 tsp salt
1/4 tsp baking soda
1/2 cup whole milk
1 egg
1/2 vanilla bean scraped
1 tsp vanilla extract
2 tbsp butter melted
cooking spray
marshmallow glaze (slightly adapted from a Saveur recipe)
2 cups of mini marshmallows
butter
1/2 vanilla bean scraped
1 1/2 cups powdered sugar
3 tbsp butter
1/4 cup water
Instructions:
Preheat your donut-maker. A lot of times you can find these secondhand, but they also have them at Target and on Amazon. Sift together the dry ingredients in a medium sized bowl. In a small bowl whisk together your wet ingredients. Pour the wet ingredients into the dry ingredients and stir to combine making sure not to over stir. Place the mixture into a piping bag or ziplock (cut the corner off) to allow for piping the mixture. Spritz the donut maker slightly with cooking spray. Pipe the donut mix into your heated donut-maker. Cook per the instructions that came with your appliance. Meanwhile, make your glaze. If you have a nonstick pan this is a good time to use it, if not a small to medium-sized saucepan should work just fine, add water and butter over medium heat. Melt the butter and add mar mallows. Stir continuously unit they have all melted 1-2 minutes. Then whisk in sugar mixture and vanilla bean.
Once your donuts are done and golden brown place them on a wire cooling rack (with wax or parchment paper underneath to catch the excess glaze). Pour your glaze over the top (no pun intended) and finish with sprinkles!
