Ingredients:
1/2 cup neutral oil
2T melted butter
1 cup brown sugar
2 beaten eggs
4 brown/over ripe bananas (mashed)
1 3/4 cups sifted flour
1.5 t baking soda
3/4 t salt
1/3 cup greek yogurt
1T vanilla
1 cup chopped toasted walnuts or pecans
1T cinnamon (yes, that's right)
Instructions:
Toast the nuts on a sheet pan at 300 degrees for 5ish minutes. They should feel warmed throughout. If you smell nuts, they are done. Let them cool and turn the oven up to 345. Prepare a 5X9″ loaf pan by rubbing it with a little oil. Cut a piece of parchment and place in the bottom of the pan for a little insurance. Beat the sugar and oil in a bowl. Add eggs and mix well. Add bananas and mix again. Sift the flour, soda, cinnamon, baking soda, and salt together and add the dry ingredients to the oil mixture alternating with the yogurt and vanilla until mixed. Don’t over beat. Fold in the nuts and pour into your pan. Bake for 55 minutes or until toothpick comes out clean, no longer than an hour. Its delicious plain, but even better with butter, fig compound butter or cream cheese.
