Ingredients:
1 cup almonds
1 cup organic or natural sugar
½ tsp almond extract
½ tsp salt
½ tsp baking powder
1/3 cup flour
1 stick butter
1 tbsp Cointreau
3 eggs
Instructions:
Use a food processor to process the almonds until they are ground. It won’t be quite a meal texture, there will be some texture. Add butter, sugar, eggs, extract, Cointreau. Mix. Add flour, baking powder, and salt and mix again. Pour into a parchment lined cake pan (butter the sides). Cook at 350° for 30-33 minutes. Don't over bake! Insert a toothpick in the center; if it comes out clean, it’s done. Cool it in the pan on a baking rack. Flip it out on a plate; remove parchment and dust with powdered sugar. Serve with seasonal berries mixed with a touch of sugar and vanilla ice cream. (Or just serve it plain, its really moist enough that it doesn't need a thing!)
